BACON FRIED RICE

This simple yet tasty fried rice is one of Lilian's favorite comfort food growing up created by her mom (yes! and that's why our kids called it Oma's Fried Rice. Oma means grandma in Indonesian :)) And this yummy goodness is free 7 out of the 9 major food allergens. 

Yields:

4 servings

Ingredients:

2 tablespoons canola or vegetable oil, plus more if needed

4 slices bacon, diced

1 1/4 pound chicken breast, diced

2 tablespoons minced garlic (5-6 cloves)

1 1/4 cup diced carrots

4 scallions, chopped

3 cups cooked rice

1 tablespoon soy sauce

1 tablespoon mirin (rice wine)

Salt

Black pepper

Directions:

  1. Heat a large frying pan or wok over high heat then add the 2 tablespoons of oil and the bacon. Cook the bacon for about 1-2 minutes until slightly crispy, stirring occasionally. 
  2. Add chicken breast, season with salt and pepper, stir until chicken is cooked. Add carrots and stir occasionally for about 1 minute until carrots are slightly softened. Then add 1 tablespoon of soy sauce.
  3. Add cooked rice to the mixture and keep stirring until the rice is completely coated. Season with salt and pepper if needed. Add 1 tablespoon of mirin and keep stirring until rice is heated through.  
  4. Garnish with scallion and turn the heat off. 
  5. Serve while hot.
